Irina Sharipova: brewing knowledge, business, and community through coffee
Irina Sharipova is more than a coffee professional; she is a teacher, consultant, and storyteller whose influence spans continents. Based in Dubai, she has built a reputation as one of the Middle East’s most trusted specialty coffee experts. Her journey began in Saint Petersburg, Russia, where an inspiring café encounter drew her behind the espresso machine. From there, she advanced from barista to chef barista, training manager, competition judge, and café co-founder, eventually earning recognition as a Q-grader and authorized Specialty Coffee Association (SCA) trainer.
Over 12 years in the industry, Irina has trained students from more than 25 countries and awarded over 530 SCA certificates. Her courses are among the most respected in the region, designed to suit both newcomers and seasoned professionals. ‘Sharipova Coffee’ offers foundational classes such as Introduction to Coffee, where students learn coffee’s journey from farm to cup, as well as advanced programs like Sensory Skills Intermediate and the Coffee Value Assessment (CVA), which equip participants to analyze quality with precision. With small class sizes and handson tasting, her training emphasizes more than technical ability, it builds confidence, sensory awareness, and a shared vocabulary of quality.
Irina’s expertise extends far beyond the classroom. Through her consultancy services, she helps cafés and roasteries translate knowledge into thriving businesses. She has guided coffee shops in designing efficient bar layouts, selecting the right equipment, and creating well rounded menus that highlight both classic beverages and modern brewing methods. Her work often includes staff training and recipe calibration to ensure consistency across multiple outlets. One notable Dubai café chain turned to her when transitioning from commercial to specialty beans; with her help, they streamlined sourcing, upgraded machines, and elevated quality across 30 locations.

Irina’s influence is also felt through storytelling. As the host of the podcast “Coffee Business in the Middle East”, she highlights roasters, green traders, and café entrepreneurs, offering insights into the fast-evolving regional coffee landscape. The podcast has grown into a recognized platform, even featured at international events like World of Coffee Dubai.
At the core of her work lies a simple belief: coffee is not just about brewing, it’s about connecting people, empowering professionals, and raising industry standards. Whether training a first time barista or advising an established roastery, Irina Sharipova blends technical mastery with cultural insight, ensuring that each cup of coffee tells a story of care and craft.
From Russia to Dubai, from local cafés to international championships, Irina’s journey is a testament to where passion and persistence can lead. Through education, consultancy, and community building, she continues to shape the specialty coffee scene; one course, one café, and one conversation at a time.
